Jesse Griffiths is a chef, author, and avid outdoorsman. His life’s work has been dedicated to teaching others how to harvest and elevate their wild game in the kitchen.
He’s authored The Turkey Book & The Hog Book through The Wild Books, as well as Afield. All three books were nominated for a James Beard Award, with The Hog Book winning the Best Single Subject category in 2022.
He’s also the owner of Dai Due, an Austin-based restaurant that has been recognized with a Michelin Green Star, and a host of other awards..
His latest project, The Pedernal Project, highlights wild game cooking for its members, with exclusive videos, recipes, butchery tips and cooking lessons.
